its not the period correctness I cherish, as I am not an "ayatollah" of that posture - some of my builds are clearly sinful in that regard as they favor efficiency rather than period parts.
its more that a lot of later shimano stuff - especially the cranksets - look to me as rather unelegant, bulky, "spider like" having been designed possibly as much to make look the previous parts as out of fashion as being "better"
so I don't find them to fit most old skinny frames. Sram or rotor in that regard look much better to me and I like some neo retro buids on nice frames
for example, I love the timeless looking Middleburn crankset RS7 or RS8 which is as much elegant now as it has been ten or more years ago when it was dubbed RS2
